1. Walnut Carrot Cake

A delicious cake recipe that will make you forget your basic cakes. This walnut carrot cake is a melt-in-mouth recipe and also Shivesh’s favorite🤭And do you know a secret? This cake recipe has “no refined flour” and “no sugar”. It’s an easy, quick, and healthy recipe that you won't ever be tired of eating.
Do try this recipe and follow the below instruction to bake a perfectly delicious and moist walnut carrot cake.🥮

Cake stand

INGREDIENTS

15gm powdered flaxseed
75gm gur or jaggery powder
75gm vegetable oil
½ tsp vanilla extract
112gm grated carrot
88gm wholewheat flour
½ tsp baking soda
½ tsp baking powder
½ tsp ground cinnamon
Chopped walnuts
A pinch of salt
3 tbsp water

INSTRUCTIONS

  1. Add your powdered flaxseed to a bowl, pour in a little water, and mix well using a whisker.
  2. To the flaxseed paste add jaggery powder, add vegetable oil and vanilla extract, and give them a quick mix.
  3. Add in your grated carrots and mix everything together.🥕
  4. Now sift in wholewheat flour, baking soda, baking powder, cinnamon powder, a pinch of salt (yes, even the desserts need salt), and lastly add chopped walnuts for that crunch, mix all of it together nicely.
  5. Preheat the oven to 180 degrees for 10 minutes.
  6. It’s baking time! Line your baking dish with parchment paper or butter paper and add in your prepared batter and bake at 180 degrees for 40-60 minutes.
  7. Cool down your cake completely before demoulding it, or else it will not come out properly or it will break.
  8. Use a cake stand to serve your freshly baked cake very beautifully and eat it right away!🥧😋

 

 


2. Sweet Potato Chaat

Next on the list we have sweet potato chaat which is one of our favorites too. This sweet+savory shakarkandi chaat is so delicious and filling that you can’t stop at one bite. Also, this recipe can be made fast-friendly with slight changes. You can even play around with the ingredients to suit your taste buds, availability, and quantity.

Textured plates

INGREDIENTS

5gm ghee
½ tsp cumin seeds or jeera
A few curry leaves
Some chopped green chillies
200gm sweet potato
1 tsp red chili powder
½ tsp chaat masala
Salt to taste
Fresh coriander leaves

INSTRUCTIONS

  1. Add pure cow’s ghee (for amazing taste and smell) to a pan and let it heat a little then add cumin seeds, some curry leaves, and chopped green chillies. You can use chillies as per your spice tolerance.🌶️
  2. Saute this for about a couple of minutes or until the curry leaves have been tempered. At this stage you will get a nice aroma of curry leaves.
  3. It’s time to add sweet potato and give it a quick mix. Now add all the flavoring spices like salt, red chili powder, and chaat masala, mix everything nicely, and saute on low heat until the sweet potatoes start turning golden brown.
  4. Turn off the heat and serve hot on a plate. 🍽️
  5. Lastly, garnish with fresh coriander leaves, use your cutlery and dig in! 🍠🍴

 

 


3. Coconut Macaroon

INGREDIENTS

150gm desiccated coconut
150 gm condensed milk

Yes, these are the only ingredients you need!😲

INSTRUCTIONS

  1. Take a bowl and add both the ingredients, desiccated coconut and condensed milk to it. Use a spoon or a whisker to mix them well. 🥥
  2. Make sure that your mixture is neither too runny nor too tight. If by mistake you added too much condensed milk you’ll have to add more desiccated coconut or vice versa. The quantity of both ingredients should be equal.
  3. Use a scoop spoon to have equal portions of the mixture. Make sure portions of the ingredients are scooped out such that they have a circular body and a flat base.
  4. Line your baking dish with oil/butter/ghee if you don’t have a non-stick baking dish and arrange each scoop in it.
  5. Now you have to bake these cute little coconut macaroons at 180 degrees for just 15 minutes.
  6. Cool and serve them on a plate and it’s ready to eat!👌

 

 


4. Chocolate Yogurt Mousse

We know there are a lot of chocolate lovers out there who crave chocolate everyday but can’t have it because it’s of course unhealthy. That’s why we have brought this recipe to you which is a healthier version of chocolate that will give you a rejoicing mood.🍫

Chocolate yogurt mousse is an effortless and scrumptious recipe that can be prepared with minimal ingredients. This wholesome treat is ideal for kids and even adults and it’s going to be your favorite chocolate dish. Follow the simple steps below to make this chocolatey recipe.

Ceramic bowls

INGREDIENTS

100gm hung curd
100gm melted chocolate
Melted butter (optional)
Cocoa powder (optional)

INSTRUCTIONS

We need hung curd for this recipe, so you can either have store-bought hung curd or can make it at home very easily. Here is the method to make homemade hung curd: In a deep bowl, place a strainer and put the muslin cloth over it. Now add fresh curd to it and tie the edges of the muslin cloth together. Hang it for at least one hour and your hung curd is ready.

  1. Add hung curd in a bowl along with melted chocolate. You can use a microwave to melt chocolate or use the double-boiler method. Make sure you do not heat the chocolate for too long and keep stirring it. If you are using a microwave, it won’t take more than a minute or so.
  2. Mix both the ingredients with a spatula or whisk until they are combined well.
  3. Coat your dish or serving plate with little melted butter to stick the parchment paper and also evenly coat its top side with very little melted butter so the chocolate doesn’t stick to the paper. This step is optional, you can even skip it.
  4. Now you just need to refrigerate the chocolate dish for at least 4 hours.
  5. After 4 hours take out the dish, flip it over a plate to demould the chocolate mousse from the dish and remove the parchment paper.
  6. You can dust cocoa powder on top of it to garnish or you can even skip this step, it’s optional.
  7. Take a sharp knife and cut slices out of it🔪 and eat it quickly before it turns soft and melty, or you can also store it in the refrigerator.🍮

 

 

5. Beetroot Salad

This beetroot salad recipe is all over the internet and people are loving it. Even if you don’t like beetroot, you will love this recipe, we bet! INGREDIENTS

For the salad base:
½ cup boiled & grated beetroot
1 cup yogurt or dahi
Salt to taste
A pinch of black pepper powder
A pinch of chaat masala
Fresh coriander leaves

For tadka:
1 tbsp vegetable oil
½ tsp black mustard seeds
½ tsp cumin seeds or jeera
A pinch of asafoetida or hing
A few curry leaves

INSTRUCTIONS

  1. Add boiled and grated beetroot to a bowl, followed by yogurt which will give it a refreshing taste.
  2. Now add your seasonings like salt as per your taste, black pepper powder, chaat masala and fresh coriander leaves and mix everything together.
  3. Serve your salad on a beautiful serving plate. Your salad is just a step away, we need to prepare the tadka.
  4. In a pan, add vegetable oil, followed by black mustard seeds, cumin seeds, hing, and curry leaves, give all a mix and wait till the curry leaves get tempered.
  5. Now, this prepared tadka goes on top of your salad along with fresh coriander leaves for garnishing.
  6. Your delicious and healthy salad is ready! Mix it well before eating.🥗🥄

 

 


6. Avocado Smoothie

Half cut avocado
1 banana
1 tsp chia seeds
Half-squeezed lemon juice

1 tsp coconut oil

  1. In a blender, add half-cut avocado to prepare one glass. You can increase the amount if you are making it for more people.🥑
  2. Then add 1 full banana cut into pieces. You can adjust the quantity of banana used if you don’t like it.
  3. Add two cubes of ice for a chilled smoothie.
  4. Add chia seeds, lemon juice, coconut oil, and cocoa powder to the blender.
  5. It’s time to add your greens! Drop in a few spinach leaves and some mint leaves to give it a refreshing taste.
  6. Lastly, fill the blender with water and blend till you get a smooth consistency.
