DRINKS
Cupid Cappuccino
Ingredients

¼ cup tapioca pearls (sago pearls also work)

To Assemble

1 cup cold milk or soda water (your choice)

Method

Cook the pearls

Boil tapioca pearls in plenty of water until soft and translucent. Drain and rinse. Toss with a little sugar to keep them glossy.

Make strawberry syrup

In a pan, add strawberries, sugar, and water. Cook till strawberries soften and turn jammy.

Mash lightly, add lemon juice, and cool.
Assemble the drink
-
Add strawberry syrup to a glass.
-
Spoon in cooked pearls.

Add ice cubes.
Finish & serve

Pour chilled milk for a creamy version or soda water for a refreshing fizz.

Ingredients

¼ cup cranberry juice (unsweetened or lightly sweetened)

½ cup hot milk (or cold, for iced version)

Whipped cream or milk foam (optional)

Method

In a mug, mix coffee powder, sugar, and hot water. Stir till dissolved.

Heat cranberry juice slightly (do not boil).

200 g pasta (penne / fusilli / spaghetti)

1 tbsp olive oil

4–5 garlic cloves, finely chopped

½ cup fresh cream

2–3 tbsp beetroot purée OR tomato purée

¼ cup milk (adjust for consistency)
-
Salt to taste

Black pepper to taste
-
Chilli flakes (for garnish)

Grated parmesan or processed cheese
-
Optional: oregano or Italian seasoning
Method
-
Boil pasta in salted water until al dente. Reserve ½ cup pasta water and drain.

Heat butter + olive oil in a pan. Add garlic and sauté till fragrant (don’t brown it).
-
Add cream and stir on low flame.
-
Mix in beetroot purée or tomato purée. Watch the sauce turn soft pink.
-
Add milk, salt, pepper, and seasoning. Simmer for 2–3 minutes.

Toss in the cooked pasta and a little pasta water if needed.

Finish with grated parmesan and give it a final mix.

Heart-Shaped Pizza
Ingredients

Store-bought pizza dough or base

½ cup pizza sauce

1 cup mozzarella cheese (grated)

Cherry tomatoes, sliced

Chilli flakes & oregano
Method

Preheat oven to 200°C (or heat a pan with lid if making stovetop).

Butter Paneer
Ingredients

200 g paneer, cubed

2 tbsp butter

1 tbsp oil

1 tsp ginger-garlic paste

2 cups ripe tomatoes, puréed

1–2 tbsp cashew paste (optional, for extra creaminess)
-
½ tsp red chilli powder
-
½ tsp garam masala
-
¼ tsp turmeric
-
Salt to taste
-
¼ cup fresh cream
-
1 tsp sugar or honey (to balance tang)
-
Kasuri methi (crushed), optional
Method
-
Heat butter and oil in a pan on medium heat.
-
Add ginger-garlic paste and sauté till aromatic.
-
Pour in tomato purée and cook till oil/butter separates.
-
Add chilli powder, turmeric, garam masala, salt, and cashew paste. Stir well.
-
Lower the flame and add fresh cream. Mix gently.

Add sugar to balance flavours.
-
Gently place the paneer cubes in a paneer maker and lightly press to remove excess water. This allows the paneer to absorb the makhni gravy better.

Slide in the paneer cubes and simmer for 5 minutes.

Crush kasuri methi between your palms and add on top.

Switch off the heat and drizzle a little extra cream.
